FIELD: production of juices from citrus fruits. SUBSTANCE: citrus fruits, after extraction from them of bitter substances by nonpolar liquefied gas, are treated by aqueous solution of salt of jasmonic acid with alkali metals or ammonium. Then fruits are aged and impregnated by nonpolar liquefied gas under pressure higher than atmospheric one. After it, pressure is relieved up to atmospheric with speed providing for fruits freezing. EFFECT: increased stability of juice to microbial spoilage.
