FIELD: food industry. SUBSTANCE: method is designed for treating citrus fruits, which after extraction of bitter substances by nonpolar liquefied gas, are treated by aqueous solution of eicosapentaenoic acid salt with alkali metals or ammonium. Then fruits are aged and soaked by nonpolar liquefied gas at pressure higher atmospheric one. After it, pressure is relieved up to atmospheric with speed providing fruits freezing. EFFECT: increased stability of juice to microbial spoilage.
