FIELD: food-processing industry. SUBSTANCE: method involves extracting bitter substances from citrus fruits by means of nonpolar liquefied gas; treating with acidified aqueous solution containing mixture of lowest alkyl ether of jasmonic acid and chitosan and holding them; impregnating with nonpolar liquefied gas under pressure exceeding atmospheric pressure; reducing pressure to value of atmospheric pressure at rate providing freezing of fruits. EFFECT: increased efficiency and improved resistance of juice to microbic damage.
