FIELD: production of juices from citrus fruits. SUBSTANCE: citrus fruits, after extraction from them bitter substances by nonpolar liquefied gas, are treated with aqueous solution of salt of jasmonic acid with N-heterocyclic base and aged. Then fruits are impregnated by nonpolar liquefied gas under pressure higher than atmospheric one. Then pressure is relieved up to atmospheric one with speed providing for fruits freezing. EFFECT: increased stability of juice to microbial spoilage. 2 ex
