VODKA PRODUCTION PROCESS Russian patent published in 2001 - IPC

FIELD: alcoholic beverage industry. SUBSTANCE: invention, in particular, relates to production of vodka called "Epos". Water-alcohol solution (assortment) is prepared taking into account obtaining 40%-strength vodka. "Assortment" is thoroughly mixed and passed through carbon- refinement battery with filtration rate up to 40 dal/h with fresh carbon and up to 30 dal/h with regenerated carbon. Water-alcoholic extract of the first discharge is prepared by single infusion of 0.09-0.15 kg of wax in water-alcohol liquid. Thus obtained vodka is poured into adjustment tank. Genuine honey is dissolved in corrected water, which is then heated to boil, filtered in hot state, and, when cooled, introduced into adjustment tank. Ascorbic cid and fructose dissolved in corrected water as well as water-alcoholic infusion of wax are also added into adjustment tank. Contents of the latter are stirred, adjusted if necessary, and bottled after obligatory controlling filtration. Finished vodka is composed of, kg/1000 dal: ascorbic acid 0.09-0.15, fructose 2.8-3.2, genuine honey 3.5-4.5, first-discharge water-alcoholic infusion of bee wax 0.4-0.45 l, and water-alcohol liquid - the balance. EFFECT: improved organoleptic characteristics and storage stability due to presence of honey, bee wax, fructose, and ascorbic acid providing soft taste, elimination of alcoholic odor, and formation of aromatic complex. 1 tbl, 3 ex
