FIELD: food industry. SUBSTANCE: according to the present innovation the suggested food protein product is obtained due to gradual combined enzymatic hydrolysis of proteins of soybean isolate with the help of enzyme of microbiological synthesis and enzyme of animal origin and characterized by certain ratio of components, weight%: peptides 65.0-75.0; amino acids 5.0-11; fats 0.2-0.6; vitamins 0.3-0.7; minerals and microelements 2.5-3.5; residual moisture 3.0-7.0 and ash - the rest. During the first stage of enzymatic hydrolysis one should apply enzyme of microbiological synthesis - protosubtilin, during the second stage - pancreatic homogenate of swine and/or cattle. protosubtilin is used predominantly at concentration of 1.0-1.5% against the weight of soybean isolate, homogenate - at concentration of 15-20% against the weight of soybean isolate.
