FIELD: sugar production. SUBSTANCE: method includes cooking of last-crystallization strike in vacuum apparatus to readiness and subsequent use of the latter for crystallization of sugar. In particular, strike is cooled in several steps in strike mixers, while required cooling rates are maintained in each step. According to invention, strike is cooled in vacuum apparatus to 93.8- 94.5% level of sweet substance and, prior to discharged from vacuum apparatus, diluted with hot water to 90.0- 90.5% level of sweet substance. At the end of this process, aqueous or alcoholic solution of disodium dioctylculfosuccinate is added in amount 0.003-0.005% of the weight of strike to reduce viscosity. Strike is then ripened in vacuum apparatus during 15 to 30 min. EFFECT: increased yield of sugar due to more intensive depletion of molasses, intensification of sugar crystallization, and improved quality of lastcrystallization sugar.
