FIELD: food industry.
SUBSTANCE: invention is related to sugar refining industry. Method provides for boiling of fillmass of first, second and third crystallisation in vacuum apparatus and centrifugation of fillmass with picking of sugar crystals and run-off syrups which are put on for boiling of fillmass and sugar liquoring of first and second crystallisation. During centrifugation of fillmass of first, second and third crystallisation, crystals are washed with the first fillmass run-off syrup at temperature 50-65°C in quantity 2-8 l/min diluted to 60-74%. Washed crystals of sugar of third crystallisation are liquored by deammoniationed condensate at temperature 60-80°C till content of SV in melt liquor is 68-75%. Melt liquor is supplied to boiling of fillmass of first crystallisation. Run-off syrups, obtained after sugar washing of first and second crystallisation are supplied respectively to boiling of fillmass od second and third crystallisation.
EFFECT: invention provides increased outcome and sugar quality.
