METHOD OF VODKA PRODUCTION Russian patent published in 2001 - IPC

FIELD: liqueur and vodka industry. SUBSTANCE: invention relates to method of production of vodka "Forvard". Method involves preparing an aqueous-spirituous solution by mixing rectified ethyl alcohol "Luks" and purified drinking water. Sugar is added to an aqueous-spirituous solution as an aqueous solution or 65.8%-th sugar syrup. Crushed oat seeds are soaked in water up to complete swelling followed by addition of an aqueous-spirituous solution. Mixture is infused, infusion is poured off, filtered and filtrate is divided for two equal parts. One part of filtrate and sugar are added to an aqueous-spirituous solution, prepared mixture is stirred thoroughly and subjected for treatment with active carbon by its passing through carbon- -cleansing battery at filtration rate up to 40 dal/h for fresh carbon and up to 30 dal/h for regenerated carbon. Vodka is fed into finishing tank and oat an aqueous-spirituous infusion of the 1-st blend remaining part is added, proof is controlled and bottled with obligatory control filtration. For production of 1000 dal of vodka "Forvard" the following components are used: sugar 9.5-10.5 kg; oat an aqueous- -spirituous infusion of the 1-st blend, 3.8-4.5 l; an aqueous- -spirituous liquid prepared of rectified ethyl alcohol "Luks" and water, the balance. Proposed method provides to prepare vodka with high biological and nutrient value, enhanced organoleptic indices, stable at storage due to synergetic interaction of components and procedures of method providing taste softening and esters formation making pleasant vodka aroma.
