FIELD: confectionery industry. SUBSTANCE: hard crystallized coating for confectionery products contains at least 90% of polyoles mixture which consists of 20-50% of mannitol on conversion to dry substance or 5-50% of glucoso-1,6 mannitol. The left dry substance of mixture is at least one polyole such as xylitol, maltite or lactite. Claimed method proposes preparation of said coating with the help of hard panning. As a substance for acceleration of panning speed at least one polyole such as xylitol, maltite or lactite is used on conversion to dry substance of mannitol, 20-50%, or 5-50% of glucoso-1,6 mannitol. Proposed panned product with said crystallized coating, for example, is chewing gum. Increased crisp properties of coating improves tastiness of confectionery product.
