FIELD: processing of edible raw material, applicable in branches of the food and processing industries using extrusion. SUBSTANCE: the extruder has a body and a screw conveyer located in it. The extruder prematrix zone has successively arranged cooling chambers. The cooling chambers represent annular ducts that are interconnected by adjacent holes of the same diameter. The holes are shifted relative to one another. The screw conveyer shaft in each cooling chamber is provided with oval-shaped blades. The blades repeat the profile of the annular duct and are rigidly fastened on the shaft surface. EFFECT: stabilized pressure in the extruder prematrix zone at variation of the process parameters in the course of extrusion of various raw material. 4 dwg
