FIELD: processing food-stuff; food-processing and other industries. SUBSTANCE: proposed screw extruder includes cylindrical housing terminating in molding head, loading unit and screw feeder. Molding head is rotatable relative to housing. Inner taper surface of molding head is provided with passage of varying section. Depth of said passage increases towards reduction of cone diameter. Outer surface of molding head is provided with bush having groove engageable with ball of hold-down unit. Contacting end parts of housing and molding head are provided with labyrinth seal. Proposed extruder ensures stabilization of pressure in pre-matrix zone at change of technological parameters of process due to energy arising at fluctuations of pressure of product passing through matrix.
