FIELD: chemical technology. SUBSTANCE: invention relates to technology of crystallization of organic compounds from solution containing thereof. Method of extraction involves preparing a viscous supersaturated parent solution having viscosity value 100-1000 Pa x s and supersaturation degree less 4. In this solution seed charge of crystals form with a size about 10-120 mcm. Prepared crystals are separated from intercrystal solution. Before crystallization the parent solution is evaporated up to attainment of supersaturated state and high viscosity of solution is attained by cooling. Organic compound to be extracted is xylose, mannose, xylitol, mannitol, lactose, lactite, sucrose, glucose, fructose, maltose, maltite, isomaltose, isomaltulose, lactose, α-D-glucopyranosyl (1_→6)-mannitol and others. Formation of seeds charge of crystals is carried out by effective stirring the parent solution for their spontaneous formation or by addition of seed charge crystals of compound to be extracted.
