FIELD: food industry. SUBSTANCE: invention relates to production of xylose used in confectionary industry and for preparing spices and xylitol. Method involves concentrating xylose an aqueous solution at xylose content 30-60 wt.-% to oversaturation state. Then solution containing 75-95 wt.-% of dry matter and with oversaturation degree index 1.1-3.0 is crystallized at cooling and stirring in the range of temperatures 80-20 C, preferably, at 65-25 C. Xylose crystals are extracted from crystalline mass. Biomass hydrolyzate, sulfide digesting solution of wood processing industry and other sources are used as the parent xylose solution. Method provides preparing xylose from solutions with its relatively low content with respect to dry matter of solution.
