FIELD: organic chemistry, food industry. SUBSTANCE: invention proposes novel derivatives of aspartyl dipeptide ester (including their salts) presented by the formula (I) where each among R1, R2, R3, R4, R5 means independently each of other substitute taken among hydrogen atom (H), hydroxyl group (OH), alkoxy-group (OCH3, OCH2CH3, OCH2CH2CH3 and so on) with 1-3 carbon atoms, alkyl group (CH3, CH2CH3, CH2CH2CH3 and so on) with 1-3 carbon atoms; R6 means substitute taken among hydrogen atom, benzyl group (CH2C6H5), cyclohexylmethyl group (CH2C6H11), phenyl group (C6H5), cyclohexyl group (C6H11), phenylethyl group (CH2CH2C6H5) and cyclohexylethyl group (CH2CH2C6H11); R7 means substitute taken among hydrogen atom, methyl group (CH3), ethyl group (CH2CH3) and isopropyl group (CH(CH3)2); R8 means substitute taken among methyl group, ethyl group, isopropyl group, n-propyl group (CH2CH2CH3) and tert.-butyl group (C(CH3)3) under condition that derivatives comprising benzyl group as R6 and with hydrogen atom as R7 as well as p-hydroxybenzyl group as R6 with hydrogen atom as R7 are excluded. Compounds show high sweetening capacity and enhanced stability to hydrolysis. Invention proposes also sweetening agent comprising compounds based on invention proposed.
