SUBSTANCE: invention relates to a sweetening agent composition with high-intensive sweetness and sweetness quality approaching to sucrose sweetness that comprises derivative of aspartyl-dipeptide ester of the formula (1):
wherein R3 is taken among the group consisting of hydrogen atom, hydroxyl group, methoxy-group and methyl group wherein: a) when R3 means hydroxyl group then R1 and R5 are taken independently among the group consisting of hydrogen atom, hydroxyl group, methoxy-group and methyl group; R and R4 are taken independently among the group consisting of hydrogen atom, hydroxyl group and methyl group; R6 and R7 mean independently hydrogen atom or methyl group; b) when R3 means methoxy-group then R1, R2, R4 and R5 are taken among the group consisting of hydrogen atom, hydroxyl group, methoxy-group and methyl group, and R6 and R7 mean independently hydrogen atom or methyl group; c) when R3 means hydrogen atom or methyl group then R1, R2, R4 and R5 are taken independently among the group consisting of hydrogen atom, hydroxyl group, methoxy-group and methyl group; R6 and R7 mean independently hydrogen atom or methyl group if at least one radical among R1, R2, R4 and R5 means hydroxyl group or methoxy-group; when R6 and R7 mean different substituents then carbon atom to which these substituents are bound is in (R), (S) or (RS)-configuration, and other high-intensive sweetening agent, for example, as aspartam, or at least one of compounds coming to the group consisting of sugar, sugar alcohol and oligosaccharides. This composition provides enhancing taste onset of indicated derivatives and to attenuate after taste that results to improvement of balance in taste onset and after taste. Also, indicated derivatives of aspartyl-dipeptide ester can be used as modifying agents of taste. Application of indicated modified agents provides effect for elimination or inhibition of bitter taste and without undesirable effect on physical properties of compositions, such as foodstuff, beverage and medicinal preparations, especially, viscosity of liquid compositions or deterioration of quality, such as browning during storing.
EFFECT: improved, enhanced and valuable properties of compositions.
