FIELD: food-processing industry. SUBSTANCE: method involves providing absorption of wood pyrolysis volatile products by liquid circulating via cooled loop; introducing liquid and wood pyrolysis volatile products into absorber and simultaneously dispersing said components in swirling dispersion layer, which is formed through swirling of gas and liquid flows during introduction thereof into absorber; collecting vapor phase of preparation; separating unabsorbed part of pyrolysis product with following collection of dispersion phase of preparation and discharge of gas into atmosphere. Vapor and dispersion phases are collected in individual vessels. Unabsorbed part of products is separated by treating smoke gas at discharge end of absorber in high voltage electrostatic field. To obtain preparation, vapor and dispersion phases are mixed at predetermined ratio depending on kind of food product and characteristics of treatment technology. Apparatus has smoke generator with heater, absorber formed as swirling contact chamber, liquid accumulator mounted under absorber, connected with it through inlet branch pipe and provided with temperature regulating unit, and system for supplying liquid and wood pyrolysis volatile products into absorber. Dispersion phase accumulator is connected through pipeline to container for preparing ready smoke flavoring preparation. Aerosol particle settler is formed as electrostatic filter, whose inlet branch pipe is connected to liquid accumulator gas cavity, purified gas discharge branch pipe is connected to vacuum pump, and drain pipe to preparation dispersion phase accumulator. Method and apparatus allow smoke flavoring preparation with controlled content of vapor and dispersion phase substances to be produced.
