Abstract RU 2200429 C2

FIELD: production of flakes for everyday and prophylactic feeding. SUBSTANCE: moistened to preset humidity, raw material is germinated till appearance of germs and brought to humidity of 16-25%. Then half-finished product is subjected to treatment by infrared radiation till twice increasing of its volume, in comparison with initial raw material, and rolled, and after rolling prepared product is cooled to 18-30 C and subjected to additional treatment by infrared radiation in the same regimes as before rolling. Moistening is conducted by means of steeping in water with temperature 18-40 C for 2-4 h, and germination is carried out under conditions of environmental surrounding for 24-36 h. Treatment by infrared radiation is carried out in the following regimes: density of radiant flow is 60 kW/sq.m; duration of treatment is 18-90 s; achieved temperature on surface of half-finished product is 200-300 C. Proposed method reduces time up to 0.5-2 min for preparation of culinary dish from flakes. Flakes may be also used in dry form.
