FIELD: food-processing industry, in particular, production of alcohol-free beverages from raw plant extracts and concentrates. SUBSTANCE: method involves providing two-staged extraction in pulsing mode at pulse-repetition frequency of 0.1-0.5 Hz and treatment multiplicity of 5-8, first stage including concentrating extract until content of substance under extraction process is 5-15 wt% (optimal value of 7 wt%) and filtering resultant liquid, and second stage including further concentration of resultant liquid until dry substance content in solution is at least 70 wt%. Concentration process may be effectuated in pulse- type evaporator at pulse-repetition frequency of 0.08-8 Hz. Method allows processing time to be reduced by about 2.5 times. EFFECT: increased efficiency by enhanced extraction of biologically active substance, elimination of sedimentation during storage of concentrate and final bottled product. 4 cl
