FIELD: food-processing industry. SUBSTANCE: briquetted food concentrate includes powder base of vegetable products, dry vegetables, edible salt, protein-containing component, cracked black pepper, fat, and glycerin. Powder base is ready-to-eat dry potato and wheat flour. Components are used in the following ratio, wt%: dry potato 38.0-41.0; wheat flour 37.9-39.9; dry vegetables 2.3-5.0; edible salt 0.4-0.8; protein-containing component 3.0-6.0; cracked black pepper 0.05-0.15; fat 10.0-11.0; glycerin 2.0-2.5. Concentrate may further include powder aromatizers used in an amount of 2.0-3.9 wt%. Protein-containing component is dry milk and/or powdered egg. Food product comprises complex hydrocarbon base and substantially reduced fat content. Food product is readily prepared and briquetted and is kept in hermetically sealed package without use of synthetic anti-oxidants, does not require thermal treatment and may be used as fast- prepared garnish.
