FIELD: biotechnology. SUBSTANCE: the suggested method deals with obtaining protein preparation out of the wastes of castor oil production - toxic castor plant oil cake of improved properties and could be applied in industrial process. Castor plant oil cake is reduced up to particles' size being 0.5 mm, not more, 0.05-0.5%- alkaline solution is introduced, at weight ratio of raw material : extragent being 1:3 - 1:11. Suspension is mixed for 10-60 min at 40-100 C, centrifuged or pressed, bagasse should be removed. The mixture of lactic bacteria should be added in to the extract cooled up to 37 C to conduct fermentation under stationary conditions at 37 C for 4.0- 20.0 h. After forming a clot one should carry out protein sedimentation at 50-100 C for 5- 25 min. The innovation in question enables to increase nutritive value of protein preparation.
