FIELD: biotechnology.
SUBSTANCE: mass of Californian red worn is homogenized and blended with 0.01-0.5 % alkali solution in ratio of 1:3-1:11. Extraction of protein and other nutrients is carried out at 40-100°C and continuous agitation for 10-60 min. Insoluble solid residue is removed. Protein is precipitated in isoelectric point by extract acidifying up to pH 4.0-6.0. Precipitated protein is separated.
EFFECT: product with high content of essential fatty acids.
