FIELD: chemistry.
SUBSTANCE: invention relates to biotechnology. Method includes the following stages: larvae of insects are washed at temperature 20°C - 125°C for 2.0-20.0 min, defatted, then, crushing and extraction of protein is carried out for 2-20 min with knives working with frequency of rotation 1400-3000 rev/min and mixer with frequency of rotation 18-30 rev/min, at t 20-125°C for 2.0-60.0 min, hydromodulus 1:1-1:15, pH 5.0-14.0, after which sediment is removed. Ferment, consisting of monocultures of lactic acid bacteria, bifidobacteria, propionic acid bacteria, acetic acid bacteria, leuconostocs and yeasts or their mixture, composed in any ratios, is introduced into obtained extract, with further fermentation, protein is separated and dried.
EFFECT: invention makes it possible to increase property, biological value of protein, extend storage term, increase protein output, form denser protein structure.
