FIELD: confectionery industry. SUBSTANCE: method involves producing chewing gum comprising N-substituted aspartame derivative with changed release rate, according to first version, by mixing N-substituted aspartame derivative with modifying substance and introducing resultant mixture into chewing gum; according to second version, mixing said aspartame derivative with agglomerating substance and solvent for partial covering of N-substituted aspartame derivative, drying and introducing dried substance into chewing gum; according to third version, introducing N-substituted aspartame derivative into rolling compound adapted to be applied onto final chewing gum; according to fourth version, introducing N-substituted aspartame derivative into glaze on chewing gum pellet; according to fifth version, mixing N-substituted aspartame derivative with filler, processing resultant mixture and introducing into chewing gum.
