FIELD: food industry. SUBSTANCE: invention relates to technology for treatment of fruits before their storage. Essential oils of the same fruits and epiphytic substances of cuticular layer of vegetable raw are applied on surface of fruits from miscella in order to reduce losses in bacterial damage and to prolong the storage time of fruits. The miscella is prepared by extraction of biomass of micromycetes Mortierella strangulata with nonpolar extractant in supercritical state. Invention provides enhancing safety for fruits protection against bacterial damage and increasing time for storage of fruits. EFFECT: enhanced protecting method. 3 ex
