FIELD: processes for making canned evaporated milk with sugar.
SUBSTANCE: method comprises steps of growing lactose crystals in evaporated milk at cooling it and introducing in milk dry crystal seed; performing seed introducing by two stages: during first stage at temperature 31 - 35 C adding seed in quantity consisting 0.02% of product mass and during second stage at temperature of milk equal to 20 C adding seed in quantity consisting 0.01 - 0.02% of product mass.
EFFECT: enhanced quality of evaporated milk with sugar.
