FIELD: food industry.
SUBSTANCE: method envisages performance of processes of dissolution and saccharification of grain polysaccharides (starch, cellulose and hemicellulose) by enzyme preparations simultaneously with grain disintegration in a circulation loop by vibrocavitational colloid mills till microparticles size is 1-50 mcm with water duty 1:1.8-3. Crushed and rolled grains are discretely added in a reactor into a preliminarily prepared solution of the enzyme preparations. Dissolution is performed during 3-4 hours, saccharification - during 1-2 hours with continuous agitation of the medium; after that the saccharified wort is fermented.
EFFECT: invention allows to reduce expenditure of heat power on wort preparation and to increase ethanol yield.
