SUBSTANCE: invention relates to carminic acid chelate compound designated for staining foodstuffs. Invention describes a carminic acid chelate compound representing product of interaction of carminic acid with organic salt of bivalent metal MX wherein: M is a bivalent metal taken among the group including Ca, Mg, Sr and Ba; X is anion of organic acid taken among the group including GliP-, AcO-, Cit- and Lact- wherein GliP- is anion of glycerolphosphoric acid; AcO- is anion of acetic acid; Lact- is anion of lactic acid; Cit- is anion of citric acid. Also, invention relates to a method for preparing a carminic acid chelate compound. Also, invention claims foodstuff and beverage comprising carminic acid chelate compound as a dye described above. Invention provides preparing stable intense staining the broad assortment of foodstuffs being without increased dye consumption.
