FIELD: technology treatment of vegetable raw.
SUBSTANCE: invention relates to a method for preparing red nutritive dye from vegetable raw. Invention describes a method for preparing nutritive dye that involves milling a vegetable raw, its extraction with saturated an aqueous-alcoholic solution under pressure above atmosphere with periodic dropping pressure to atmosphere value and the following recovery to the parent value. Then extract is separated and concentrated to obtain the end product. Proposed method allows reducing the duration of technological process up to 18-20 min in retaining the yield and quality of dye and without increase of energy consumption.
EFFECT: improved preparing method.
