SUBSTANCE: volutes are washed, laid out in layers on pallets and frozen at -12-15°C for 12-24 hours. Then volutes are defrozen at room temperature for 1.5-3 h until volute tail is thawed. Further body is separated from cone for instance, using a fork.
EFFECT: method for drawing out of volute from cone without damage, losses of taste characteristics, and destruction of biologically active materials and proteins.
