FIELD: food-processing industry, in particular, production of ice-cream formed on stick. SUBSTANCE: method involves cooling forms to low temperature; feeding mixture to be cooled in forms; cooling until crust is formed on mixture surface; inserting stick into central portion which is still soft; withdrawing ready product from forms. Forms are composed of two halves made in the form of half-enclosures, which adjoin to one another at formation zone. Half- enclosure opening devices and devices for withdrawal of ready products by sticks are positioned on product withdrawal station of apparatus. Half-enclosures are moved by conveyor. Low temperature is maintained by means of cryogenic gas. EFFECT: increased efficiency and improved quality of resultant product. 12 cl, 4 dwg
