FIELD: food industry, more particularly alcoholic industry. SUBSTANCE: method comprises preparing batch, cooking starch-containing stock, saccharizing thereof and subsequently separating it into solid and liquid phases. Batch is prepared under conditions which are optimum for proteolytic enzymes, introducing protosubtilin in amount of 10-16 units per g of grain protein and maintaining mixture for 20-30 min. Solid phase is washed with water, and wash water is combined with liquid phase. EFFECT: intensified fermentation. 1 dwg, 1 tbl
