FIELD: processing of food dough for obtaining of various kinds of bakery products.
SUBSTANCE: apparatus has first rolling member equipped with plurality of dough rolling rolls which are sequentially movable from distal to proximate side in the course of movement of food dough strip, along it. Each of rolls is rotating on its axis of rotation. Apparatus has second rolling member on which food dough is transported, and controller for controlling velocity and direction of movement, as well as velocity and direction of rotation of rolling rolls. Method involves controlling aeration intensity by varying velocity of movement of rolling roll and setting circumferential velocity of rolling roll equal to or approximating the velocity of displacement of food dough surface by varying rotational speed of rolling roll.
EFFECT: provision for homogeneous structure of food dough and feeding of thin rolled food dough to subsequent processes.
