SUBSTANCE: apparatus has first rolling member equipped with plurality of rolling parts, each of said rolling parts being successively movable against direction of movement and kneading and rolling transported dough strip. Apparatus is further provided with second rolling member, which transports dough strip between first and second rolling parts.
EFFECT: increased efficiency by providing release of excessive gas from fermented dough to thereby provide for its uniform structure.
