FIELD: food-processing industry, in particular, production of dry compositions of alcohol-free beverages, may be used in production of instant granulated beverages.

SUBSTANCE: method involves producing semi-finished product concentrate from raw plant material by preliminarily mixing dosed amounts of ground starch and sugar; processing berries for producing of juice and small shots; dehydrating small shots to residual moisture content of up to 8-10 wt%, followed by grinding thereof into particles of 0.02 mm size or less; concentrating juice to 55-65 wt% of dry substance; placing dosed amounts of processed solid phase into mixer and discharging concentrated juice into measurer-mixer; dosing and solving vitamin preparation, potassium iodide and iron sulfate and introducing into measurer-mixer directly before usage and thoroughly mixing with concentrated juice; moving dry components into plate-type granulator having activator equipped with drive and spaced from plate bottom and side by distance of 5-10 mm, with ratio of diameter of activator working tool to diameter of plate being equal to 1:12-1:8; moistening mixed dry components with concentrated juice and solution of vitamin preparation, potassium iodide and iron sulfate to 60-70 wt% of optimal moisture content; providing additional moistening of mixture for obtaining of granulated ready product. Basic components are used in the following ratio, wt%: starch 20.0-24.0; small shots 6.0-20.0; concentrated juice at the rate of dry substance of 5.0-10.0; vitamin preparation up to 0.4; citric acid at the rate of monohydrate of up to 5.0; potassium iodide up to 0.2; iron sulfate (nonaqueous) up to 0.3; sugar the balance.

EFFECT: improved quality of end product.
