FIELD: food industry.
SUBSTANCE: invention relates to food and food-concentrates industry for production of instant products based on fruit and berry juice concentrates containing functional additives, in particular, for producing fruit and berry jelly. Method is characterised by mixing non-water soluble component – starch with size of 10–100 mcm and fruit and berry juice concentrate with dry substances content of 44–57 wt%. In obtained mixture is added a water-soluble component – mixture of sugar powder and lactose powder in ratio 5:1 or a mixture of sugar powder and glucose in ratio 1:3. Mixture is then moistened with water or solution 0.3–0.7 wt% of citric acid for 5–10 minutes and granulation. Further, mixture is dried to residual moisture content of not more than 14 % and granules of ready product are obtained. To non-water soluble component can be added dry extraction cake of berry fruit juice with particle size of not more than 0.1 mm in ratio 10:1 or oat or rice flour is added. Furthermore, a vitamin premix can be added to juice concentrate before mixing concentrate.
EFFECT: faster drying of wet granules, and when making jelly it enables to obtain granules with good dispersibility of granules in hot water (90÷100 °C) while stirring for 10÷15 s and produce a beverage with homogeneous consistency.
