FIELD: liqueur and vodka industry.
SUBSTANCE: method involves addition of a component providing preparing vodka with alkalinity index 0.8-1.5 cm3 solution of 0.1 N HCl expendable for titration of 100 cm3 of vodka wherein this component is added to flow of purified drinking water with pH value 6.5-7.0 and the following normalized indices: alkalinity - 1.5 ml of solution of 0.1 N HCl per 100 ml, not above; oxidizing capacity - 3.5 mg of O2/dm3, not above; dry residue - 100-200 mg/dm3; mass concentration, mg/dm3: chlorides (Cl-) - 10-25; hydrocarbonates (HCO- 3) - 30-100; iron - 0.10, not above, and sulfides - 10-30. The source of this component represents sodium hydrocarbonate as an aqueous-alcoholic solution. A mixture of water and alcohol is prepared at continuous stirring in turbulent regimen followed by its cooling to 15-18°C and subjected for purification in the continuous flow for 40-60 min in vertical cylinder apparatus joined successively to form a battery wherein powder-like activated carbon OU-A is used for purification used in the amount 1 kg/1000 dal of mixture followed by separation of vodka from carbon. Flow of mixture and coal is fed in bottom part of apparatus and removed from upper part at continuous stirring the flow due to providing turbulent regimen of the flow and feeding ozone or air into apparatus through diffuser holes fitted in bottom part of apparatus. The suspension consisting of an aqueous-alcoholic liquid and powder-like carbon is dosed continuously in the mixture flow feeding for purification. The mixture is treated is carried out in both directions of the flow. Depleted carbon is separated and filtration process is carried out at the rate 800-1500 dal/h. Then vodka is fed into finishing tank wherein filling components are added at stirring. After control of the vodka strength value alcohol or purified water is added if necessary and the content of finishing tank is stirred thoroughly. Ready vodka is subjected for final purification through filters with pores size 2-5 mcm and bottled. Proposed method provides preparing vodka in unit with high output (800-1500 dal/h) with stable high physical-chemical and organoleptic indices for 2-3 years. The tasting score of vodka is 9.8.
EFFECT: improved producing method of vodka.
