FIELD: alcoholic beverage industry, particularly, production of vodka. SUBSTANCE: aqueous-alcoholic solution is prepared thus to produce vodka of 40-% strength. Mixing of alcohol and water is carried out in mixer with the following additional mixing in centrifugal pump. Flows of alcohol and water are simultaneously entered the mixer wherever high turbulence is created due to counter motion of flows. It provides for favorable hydrodynamic conditions for mixing and dissolving alcohol in water. Prepared aqueous-alcoholic solution escapes from mixer with knowingly increased content of alcohol by 0.5-1.5%. For preparing standard strength of aqueous-alcoholic solution, additional flow of water is introduced in pipeline connected mixer with centrifugal pump. Prepared solution is directed to carbon-cleaning battery consisting of three series-connected columns-adsorbers for processing with activated carbon under conditions of pseudoboiling layer. Aqueous-alcoholic solution is fed by pump from the last column-adsorber to hydraulic cyclone where large carbon particles are separated. Then vodka is directed to filtering installations consisting of frame flannel filters (filters of preliminary coarse filtering) and filters of final (fine) filtering with hydraulically compressed layer of quartz sand with grain size of 200-500 mcm. Sodium bicarbonate is separated into two doses: one of them is dissolved in corrected water, aged, and 80-% acetic acid is gradually added to prepared solution at continuous mixing. Left quantity of sodium bicarbonate is added to prepared solution of sodium acetate, thoroughly mixed, and prepared product is directed to finishing tank. Aqueous-alcoholic infusion is prepared by one-time infusing of germinated wheat grain in aqueous-alcoholic liquid. Content of the tank is thoroughly mixed after introduction of each ingredient, and corrected, if necessary, and directed for bottling with obligatory control filtration. Prepared vodka "Zolotoy Oreol" contains the following ingredients per 1000 dal of prepared product: acetic acid, 0.3-0.5 kg; sodium bicarbonate, 0.7-0.9 kg; sugar, 9-11 kg; infusion of germinated wheat grain of the Ist decantation, 1-2 l; rectified ethyl alcohol "Lux" and potable corrected water, the balance up to 40% strength. Due to combination of used ingredients and methods of production, vodka "Zolotoy Oreol" possesses higher biological and nutrient value and stability at storage.
