METHOD FOR PRODUCTION VODKA "RODNIK" Russian patent published in 2003 - IPC

Abstract RU 2212443 C2

FIELD: liqueur and vodka industry. SUBSTANCE: method involves preparing 40 vol. % aqueous-alcoholic solution by mixing drinking water purified in reverse-refinery unit with hardness value 0.2 mg-eq/dm3 and rectified ethyl alcohol "Luks". Sodium hydrocarbonate and lactic acid are divided for equal doses. One dose of sodium hydrocarbonate is added to an aqueous-alcoholic solution and another dose is combined with one dose of lactic acid and kept for 15-30 min up to formation of sodium lactate. The latter is divided for two parts in the ratio 1:3 and the larger part is added to an aqueous-alcoholic solution 10-15 min before addition of sodium hydrocarbonate. An aqueous-alcoholic solution is treated with activated carbon by its passing through carbon-refinery battery at the rate 25-30 dal/h. Remained dose of lactic acid is mixed with sugar and purified water taken in the ratio 1:15: 30, heated to 65-68 C carrying out inversion of sucrose for 25- 30 min. Mixture is divided for two parts in the ratio 1:3 and the larger part is added to an aqueous-alcoholic solution after addition of sodium lactate and lesser parts are added in the process of vodka stirring simultaneously. The vodka is kept at temperature 20-25 C for 3-4 h and subjected for filtration through sandy filters and the following bottling. The consumption of components to prepare 1000 dal vodka "Rodnik" is the following, kg: sodium hydrocarbonate, 0.15-0.35; lactic acid, 0.15-0.35; sugar, 5.5-7.0; rectified ethyl alcohol "Luks" and purified water, the balance, to the strong 40 vol. %. Proposed invention provides preparing vodka with enhanced organoleptic indices as far as its components elicit their properties at more early stage, i. e. to enrich vodka with value components and oxides of activated carbon due to enhancement of its activity at stage of contact with an aqueous-alcoholic solution and to enhance their in the following stages of its production. EFFECT: improved preparing method, enhanced and valuable properties of vodka.
