FIELD: equipment for forming of dough pieces for bagels and dry bread rings by rolling in annular gap between cylindrical surfaces, used in food-processing industry enterprises.
SUBSTANCE: forming head has casing with rolling pin, cylindrical knife, rolling sleeve with rolling cup, thrower and coil spring. Rolling cup and rolling pin are formed combined and containing solid perforated bodies with flexible members. Flexible members are immovably fixed on cup working surfaces, on inner and outer sides of rolling pin, said members being made in the form bushings resting with their rear side upon perforated rigid surface of cup and rolling pin. Rolling pin is equipped with cavity communicating with atmosphere.
EFFECT: improved quality of surface of dough pieces, wider range of dough receipts and increased rate of forming dough pieces.
