FIELD: dairy industry.
SUBSTANCE: the present innovation deals with supplementing milk before its pasteurization a preparation containing complex compounds of silver and copper based upon β-pyridine carbonic acid (niacin) as a solution at concentration of silver and copper ions being below the level of their maximum permissible concentration (MPC). The preparation should be introduced at the quantity of 1 ml solution/1000 ml milk. The ratio of ionic concentration corresponds to (0.017-0.034) Ag+/cu. dm against (0.67-0.32) Cu2+/cu. dm. The innovation enables to increase the terms of product's storage at simultaneous keeping conventional modes of pasteurization and increase biological value of this product.
EFFECT: higher efficiency.
