FIELD: food products.
SUBSTANCE: invention relates to alcohol industry, namely to production spirit out of grain raw material. Method provides for batch preparation its water and heat treatment during 1-2.5 hours, saccharification, starter of yeast, obtained wort distillation. Water and heat treatment is performed in container equipped by recirculating gabarit with treatment chamber connected to it. Bran coating separation from endosperm is performed in it during batch recirculation. This process is combined with dispersion, homogenising and batch warming. Mentioned operations are performed by supply of prime steam at temperature not less than 130°C at a speed of not less than acoustical velocity simultaneously with supply of batch. Dispersion, homogenising and batch warming are performed simultaneously at the opening of treatment chamber. Separation of fraction containing bran coating is performed after completing of water and heat treatment. According to the first version the fraction containing endosperm is moved to saccharification. According to the second version water and heat treatment is performed in two stages. During the second stage fraction containing bran coating is treated at a temperature of 150 - 160°C during 1-1.5 hours, after that it is saccharificated.
EFFECT: enhanced energy efficiency and enzyme preparations consumption.
