FIELD: food-processing industry.
SUBSTANCE: confectionery product is formed as trough filled with jelly. Trough is formed from chewing gum or soft caramel. Jelly contained within trough is visible from outside, at three sides of each confectionery piece. Method involves preparing separately mass of chewing gum or soft caramel, liquid solution and acid solution; placing said components in three separate containers; separately feeding by means of pump liquid solution and acid solution into static mixer; extruding mass of chewing gum or soft caramel through die in order to form continuous trough-shaped strip having U-shaped section; introducing into trough, along the entire length thereof, mixture of liquid solution and acid solution in liquid state; cooling continuous strip consisting of mass of chewing gum or soft caramel formed as trough and mass of jelly in the form of surface layer until the latter is gelatinized. Method allows jelly layer to be reliably held without contacting with and adhering to conveyor parts.
EFFECT: increased efficiency of method allowing contamination of conveyor parts with jelly to be eliminated, improved quality and attractive appearance of product.
