FIELD: milk industry.
SUBSTANCE: method involves collecting milk whey; reserving; pasteurizing; separating; cooling; providing isomerization of lactose into lactulose; neutralizing with acid whey; condensing and drying isomerized whey. Isomerization process which is performed using anion-exchange resin of AB-17-8 grade involves ion-exchanging treatment of milk whey at temperature of 20-50 C with resin to whey ratio of 1:3-1:5 and pH of up to 11.0±0.7; heating to temperature of 50-80 C and holding at such temperature during 30-60 min.
EFFECT: increased content of lactulose in ready product and reduced amount of reaction by-products and mineral substances deteriorating organoleptical properties of product.
