FIELD: flour-milling industry, in particular, production of wheat flour with increased content of embryo and food fibers.
SUBSTANCE: method involves preparing grain for milling process by cleaning grain mass from contaminants; treating grain surfaces and providing hydrothermal treatment; performing staged grinding of prepared grain on roll machine during break and milling processes; performing staged sorting of ground products in sieve purifier systems and forming flour in accordance with sorts; dividing break process grits into two fractions: with particle sizes ≥ 0.8 mm and particle sizes < 0.8 mm; selectively mixing sort flour, break process grits with particle sizes < 0.8 mm and grits with milling process embryo; mixing top-grade flour, first-grade flour, second-grade flour, break process grits with particle sizes < 0.8 mm, and grits with milling process embryo, or mixing first-grade flour, second-grade flour and grits with milling process embryo. Method allows two kinds of flour with increased content of embryo and food fibers to be produced.
EFFECT: increased percentage of vitamins and mineral substances in grain and improved quality of products obtained using said method for producing of wheat flour.
