FIELD: food industry.

SUBSTANCE: invention relates to food industry, namely to production of food whole-milled wheat and spelt flour from wheat-spelt milling grist. First, a milling grist of prepared wheat and spelt grains is made at ratio of 70:30% to 50:50%. Before milling, wheat and spelt grains are subjected to hydrothermal treatment by cold conditioning, moistening to moisture content of 14.5-15.0% and softening for 9-11 hours. Then the ready wheat-and-spelt mixture is milled in a knife mill at frequency of 25,000 rpm, with subsequent sorting of milling products on a flour sieve with a mesh size of 224 mcm.

EFFECT: invention makes it possible to develop an efficient technology of combined processing of wheat and spelt, as well as to obtain a ready product with high total output of whole-ground wheat-spelt flour.
