FIELD: food production technology.
SUBSTANCE: prepared beef is cut and chopped. Prepared onions are chopped. Specified ingredients are mixed with softened melted butter, salt and hot black pepper and get mince. Prepared grape leaves are frozen, better slow freezing and defreeze without access for oxygen. Then put mince in them and make dolmas, pack dolmas and bone broth. Pressurize and sterilize to get the end product.
EFFECT: invention allows obtaining preserved food with enhanced digestibility.
