FIELD: food industry.
SUBSTANCE: invention is related to technology of fish and vegetable preserves making. Preserves are cooked by skin-free halibut fillet cutting and frying in vegetable oil, garlic rubbing through and browning in vegetable oil, tomatoes cutting and blanching, cutting and freezing of green onions and peppermint, mixing of specified components without oxygen access with sake, lemon juice, table salt, black bitter pepper and red hot pepper, packing of prepared mixture and white dry wine with preset ratio of components, sealing and sterilisation.
EFFECT: preparation of preserved food with high assimilability.
