SUBSTANCE: invention is related to technology of production of preserved concentrates of dinner first courses. Method of preserved food cooking includes carrots, white roots and onions cutting and browning in melted butter, cutting and blanching of potatoes, cutting and freezing of sorrel, freezing and chopping of spinach, browning of wheat flour, cutting of meat, mixing of specified components without oxygen access with table salt, black bitter pepper and bay leaf, packing of prepared mixture and meat-and-bone broth, sealing and sterilisation.
EFFECT: preparation of preserved food with higher assimilability.
