FIELD: food industry.
SUBSTANCE: invention relates to food industry and to bakery items cooking, in particular, intended for dietary meals. Composition includes wheat flour of grade 1, compressed bakery yeasts, table salt, pectin extract of citron melon, aqueous infusion of common origanum leaves and drinking water to make dough humidity equal to 45%. Components are taken in the following weight ratio, kg: wheat flour, grade 1 - 100; compressed bakery yeasts - 1.5; table salt - 1.3; pectin extract from citron melon fruits - 10-15; aqueous infusion of common origanum leaves - 5-10; drinking water - as per calculations.
EFFECT: increase of bakery items expiry date, improvement of grain and vitamins content.
